A little less sweet

This time we’re gonna try a little less sweet and a little more green juice!

1 granny smith apple

6 carrots

3 cups of kale

3 cloves of garlic

1/2 cucumber

As weird as it sounds I put in two leaves of my aloe plant. Aloe vera contains amino acids and vitamin c. It’s also great for blood purifying and body cleansing. Not to mention, it makes an adorable house plant!

All together this made about a 20 oz (very yummy) drink.

Juicing for beginners

The key to starting juicing is start with sweet juices and teach your self to like the raw taste. Slowly work into more tart but nutrient rich veggies. My trick to juice is anything taste good with 2 to 3 granny smith apples.

Today’s juice is a sweet one for beginners out there.

2 granny smith apples

2 cloves garlic

2 cups kale

a handful of cranberries

and 8 large carrots

I try to put kale in all of my juices because it is extremely rich is vitamins, minerals, and calcium. Garlic contains antiviral properties that boost your bodies immune system so this is good to add, especially when getting sick. Garlic has a very strong taste though so only add a little at a time. Cranberries are a  natural anti inflammatory and also very good for the digestive system. Carrots and apples have less nutrients then the other ingredients, but still beneficial. They also make the juice taste like heaven

The end result from all those veggies? this awesome approximately 16 oz glass of juice.

A lot of veggies for 16 oz, I know. I try to get my juicing veggies from the farmer’s market. That saves me a ton of money! It’s much more affordable for purchasing how many veggies you need, and you get to support local and organic.

We all need a mini vacation sometimes. So I grabbed a friend, packed my bags, and off to St. Louis for two days!

Took Deidre to get her eyebrows threaded for the first time, and she loved it!Got a vegan philly cheesesteak at SweetArts 

Got to act like big kids at City Museum (out of breath the entire time)

This slide left many bruises on my backside We couldn’t leave without going to St. Louis’s free zooA successful first trip to the Midwest I’d say

Vegan breakfast

Vegan Pumpkin Cream Cheese on Ezekiel toast with a banana, peanut butter, and spinach smoothie!

Vegan pumpkin cream cheese:

1/2 container of Tofutti Cream

1 1/2 tbsp pumpkin puree

1 tsp cinnamon

1 tsp nutmeg

Place all ingredients in food processor or blender and mix until well blended.

Toast up your Ezekiel Bread or a bagel, and top it off.

Smoothie:

1 banana

1 tbsp peanut butter

1 handful of spinach

6 ice cubes

1 tsp agave nectar

1 cup water

Blend and serve!

Boots and pumpkin flavored everything

The weather is starting to feel like Fall!

Today I broke out my Target over the knee boots and Urban Outfitters floppy hat

to add a little excitement to my white vintage dress.

Fall to me means two things:

Boots and pumpkin flavored everything.

So now I’m going to go use The Baking Birds recipe, and make some vegan pumpkin cinnamon rolls to go with these boots!

B.Y.O.V. (Bring your own veggies!)

My 4th was terrific. I’ve been under a lot of stress lately, and this holiday was just what I needed. We spent the day at the lake, cooked out, and watched fireworks on a hidden bridge. How was your Independence day?

 

Three quick vegan junk food

Vegan Jalapeño poppers


These are everything I could ever ask for!

Cut a few jalapeños in half and clean out seeds

stuff with Tofutti cream

dip in milk substitute (almond, soy, etc.)

coat in a flour then panko

pan fry in a small amount of oil

TLT!

This is my go to meal when i don’t feel like cooking, but want something filling.

Just cook up some toast ( I use gluten free, but be careful lots have egg in them)

sauté some bacon tempeh, LightLife Fakin’ Bacon is wonderful

throw on some of your favorite sandwich veggies

a little bit of vegenaise

and you’re set!

Cheater Blueberry Pancakes

2 cups Bisquick

1 full banana

1 cup soy milk

mix until banana is completely mashed and consistency is even

add a hand full of blueberries

and cooking in a skillet pan with vegan butter

till both sides are golden

ps. adding fresh blueberries on top makes it 10x better

It has been a great couple of days!

Stocked up at the East Nashville Farmer’s Market this wednesday. The market runs every wednesday from 3:30 to 6:30 for those of you Nashvillians. There is also a similar market at Sevier Park every Tuesday from 3 to 6.

Cooked up some of my new fresh veggies. Sautéed the veggies in a light balsamic vinaigrette, and then put them over tomato garlic risotto. So delicious!

Then it was time for Supper and a Song at Imogene and Willie

A bunch of friends, local food, and live music! Imogene and Willie does this every wednesday night during summer; it’s always a great time.

 Finished a great couple of days with some quality time with this little friend of mine.

Super Easy Vegan Pad Thai

Vegan? check. Gluten free? check. Super easy? check. Delicious? CHECK!

Ingredients:

8 oz rice noodles (fat style)

2 tbsp peanut butter

1 tbsp olive oil

1 package firm tofu

1/4 cup soy sauce ( I prefer light sodium)

2 tsp rice vinegar

1 Tbsp ketchup

2 tsp Sriracha (optional)

scallions

peanuts

1 lime

Directions: Cut the tofu up in to squares and lightly cover with oil: bake at 400 degrees until golden

Cook the rice noodles according to package

then in a large skillet add the peanut butter, ketchup, soy sauce, vinegar, and sriracha. Cook on medium until peanut butter melts: Add the tofu, noodles, and scallions. Mix until sauce is thickened and spread evenly. Garnish with peanuts and lime and serve!

For those of you wondering about the chicks, they are doing great! They are growing so fast. I’ve had them for officially one week today, and they are twice the size already. 

See those little tails popping up? The yellow one, I haven’t named them yet so for now she goes by yellow, can fly! Well fly for a chicken haha. I put them in a box today to clean the brooder and turned around and she had flown out! The black one is a little jealous. I need to hurry up and get the coop done! We went dumpster diving for wood yesterday at some construction sites and hit the free would jackpot.
